I love Thanksgiving leftovers even more, because I get to make these amazing and delicious Cranberry Turkey Salad Sandwiches. They are so easy to make and taste absolutely amazing. You are going to love these.

We love Thanksgiving and all the leftovers that come with it. This Cranberry Turkey Salad is the perfect light meal after a big meal.

I don’t know about you, but our family always has a ton of turkey leftover after thanksgiving. My mom always gives out bags of turkey for us to take home.

With our leftover turkey, I decided I wanted to switch things up a bit, in my usually turkey sandwiches I make, the weekend after Thanksgiving.

One of my all time favorite foods, is chicken salad sandwiches. So I got thinking to myself, why don’t I just make this into Turkey Cranberry Salad, instead.

If you don’t have any leftover Turkey we like to buy Frozen Turkey’s from Jennie-O and you can stick in the oven straight from the freezer.

Turkey is so delicious, and such a healthy meat. Your family is going to love these.

I love to make them for lunch, dinner, or for light snacks. The best part is, it is so easy to make.

How to make Turkey Cranberry Sandwiches?

Step 1:In a bowl, shred your turkey. I did this with two forks, but you could easily do it with your hands.

Step 2: Add your onion, celery, and mayonnaise.

As a shortcut, I usually like to purchase pre-cut onions, because I hate cutting onions. These are usually found in the produce section of your grocery store. They come in a little clear container.

I also cut my celery pretty thin, because I find my kids complain less about it, when it isn’t in large chunks.

If you aren’t a fan of mayonnaise, you could substitute it for Greek yogurt.

Step 3: Mix to combine then fold in dried cranberries. If you don’t have cranberries, this is also very delicious with sliced grapes or apples.

Step 4: Place in an airtight container until you are ready to eat. Serve on slices of whole wheat bread. I also like to top mine with a little garlic salt, salt and pepper, or onion salt.

You could also add some lettuce or spinach to your sandwich, for some extra nutritional goodness.

what are some reicpe shortcuts?

This recipe is pretty simple, however there are a few things you could do to speed up the process.

If you don’t love turkey, you could easily switch it out for chicken. I like to purchase rotisserie chicken, and shred it, or I have even used canned chicken with this recipe.

I also purchase my onions, pre-chopped, so I don’t have to take the time to cut them myself.

I also purchase my candied pecans. If you don’t have pecans, you could also use walnuts or sliced almonds. They all taste delicious with this sandwich.

Ingredients

  • 2 cups cooked turkey shredded
  • 6 green onions finely diced
  • 3 celery stalks chopped
  • 3 Tablespoons mayonnaise
  • ½ cup dried cranberries
  • ½ cup candied pecans
  • salt and pepper to taste
  • 8 slices whole wheat bread

Instructions

  • In a bowl, place in shredded turkey.

  • Add your onion, celery, and mayonnaise.

  • Mix to combine then fold in dried cranberries and pecans.

  • Place in an airtight container until you are ready to eat.

  • Serve on 8 slices whole wheat bread
