Jiffy Cornbread Hacks

If you've ever made Jiffy cornbread before, then you know how simple it is to mix in some milk and an egg. However, you'll often end up with a dry and crumbly texture.

So what can you add to your batter to make it incredibly moist? I'm here to share the best hacks that you can easily use to enhance your basic cornbread batter!

1. Add Oil or Butter

Although vegetable oil is not included in the Jiffy box instructions, it's actually a crucial step that's left out. Adding fat like oil or butter will not only help boost moisture in your Jiffy cornbread but also prevents it from crumbling apart.

If you prefer a buttery taste, you can use 2-3 tablespoons of melted butter in the Jiffy batter. I always love topping my cornbread with pats over butter as soon as it comes out of the oven too!

2. Add Yogurt

Another easy ingredient to add moisture and thickness to your Jiffy cornbread mixture is yogurt! You could use plain Greek yogurt if you want to substitute for sour cream or mix in honey-flavored yogurt for added sweetness.

Add ¼ cup of yogurt to your batter and mix well before baking. The result is thick, rich, and incredibly delicious Jiffy cornbread!

The two ingredients called for on a Jiffy cornbread box are eggs and milk. If you replace the milk with buttermilk in equal amounts, the cornbread will turn out to be more tender and incredibly moist! 4. Add Sour Cream

Sour cream is a wonderful ingredient to mix into your cornbread batter to add a level of creaminess and richness. It won't change the overall flavor by too much. Sour cream will simply elevate the basic ingredients that are already required.

Stir in ¼ cup of sour cream to the raw batter and gently mix until the sour cream is evenly distributed.

5. Add Extra Milk

Milk is already one of the main ingredients that you add to a Jiffy cornbread mix. However, if you notice that your batter is on the thicker side, you can add a few more tablespoons of milk to increase the moisture level.

  • Sugar - Sugar doesn't change the texture or moisture levels of Jiffy cornbread. However, it's a popular choice to add to your batter if you prefer your cornbread to be on the sweeter side. One to two tablespoons are all you need!

  • 17 oz Jiffy corn muffin mix (2 8.5-ounce boxes)
  • 3 large eggs (at room temperature)
  • ¾ cup buttermilk
  • ½ cup sour cream
  • 4 oz diced jalapenos (1 4-ounce can, or 3-4 diced fresh jalapenos can be used)
  • ¼ cup red bell pepper (diced, about ½ a pepper)
  • ¼ cup butter (½ stick, melted)
  • 1 cup cheddar cheese (optional, grated)


  • Preheat your oven to 400°F (205°C) and grease or butter a 9-inch square baking pan or a 10-inch cast-iron skillet.

  • Add all of the ingredients to a large mixing bowl: Jiffy mix, eggs, buttermilk, sour cream, jalapenos, red bell pepper, melted butter, and optional cheddar cheese. Mix until well combined then transfer into your prepared baking dish or cast-iron skillet.

    17 oz Jiffy corn muffin mix, 3 large eggs, ¾ cup buttermilk, ½ cup sour cream, 4 oz diced jalapenos, ¼ cup red bell pepper, ¼ cup butter, 1 cup cheddar cheese

  • Bake at 400°F (205°C) for 30-35 minutes, or until golden on the edges and top and an inserted cake tester or butter knife comes out clean. *If your top is browning too quickly, place a sheet of aluminum foil over the cornbread for the last 10-15 minutes of baking time.
