Have you ever become attached to one of your old appliances even though you know it's time to toss it for an upgrade? That's how I feel about my old ovalcrock pot.I've used it to make everything from crock pot shrimp scampi, to crock pot white turkey chili.

The crock is cracked but doesn't leak, and the finish on the outside has been peeling for a while. I'm probably attached to it because it was a bridal shower gift and it is the first crock pot I've ever owned.

My husband and I got married a little over twenty years ago so the crock has been with for quite some time. I do have a newer crockpot that my husband bought for me a few years ago, but it's a round select-a-size.

The round bowls don't work as well for some dishes like the oval crock so I still use both. I already have my eye on some new styles so I think this is the year I'll finally ditch my old crock pot.

This crockpot zucchini and yellow squash casserole is one of the dishes that cooks up better in the oval crock. You really need a larger surface area on top to spread out the toppings. It is, after all, a casserole dish which tends to be more short and flat.

Crock pot options

There are a lot more options with the newer slow cookers. I've seen models with programming, thermometer probes, and sealing lids.They even make mini sized crock pots for those who prefer to make one small meal. Or I'm assuming, for 1-2 people vs feeding a family.

It always seems that more complicated digital controls break more often than the simpler old fashion controllers with only switches and dials. However, I'm sure that one of the programmable digital crock pots is sure to last more than 10-15 years which is a little less than I've had my old oval slow cooker.

I'd like a solid color crock pot as well. Both of my crock pots have patterns on them. Solid colors are more popular these days and I do like red.

Although a little sad, this is likely to be the last recipe I post using my beloved old crock pot. I've just got to do a little more research before I decide on a new model. So many choices, it's going to be a tough decision.

Do you have a favorite feature on your crock pot that you wouldn't want to give up? I'll admit that I went years without using my crock pot much. I've just recently discovered what a useful tool the slow cooker is so I plan to use it more often now.

Why I love it

We always grow yellow squash and zucchini in our garden every summer. So, I'll likely make this crock pot zucchini and yellow squash casserole again.

It had good flavor and was fairly easy to put together. I also love that it cooks up a crock pot so the oven doesn't heat up the house.

Ingredients

  • 2 cups medium zucchini sliced and quartered (about 2 )
  • 2 cups medium yellow squash sliced and quartered (about 2 )
  • ¼ teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ cup butter cut in cubes
  • ¼ cup Parmesan or Asiago cheese shredded
  • ¼ cup crushed pork rinds optional

Instructions

  • Place cut zucchini and yellow squash in crock pot.

  • Sprinkle with pepper, Italian seasoning, garlic powder, and sea salt.

  • Top with butter pieces, cheese, and pork rinds.

  • Cover and cook on low for 4-6 hours.

    I'm not very familiar with yellow squash and people at the farmers market says that yellow squash is the same as zucchini. Can you clarify?

      Yellow squash is a summer squash very similar in taste and texture to zucchini. They can be used interchangeably. Some say the yellow varieties have a slightly sweeter taste. You can see images of them on this page about summer squash.

      I loved the green color by something fell on it and now the top has a piece broken off. Unfortunately, they no longer sell that size crock so I need to invest in a new one.

    I love my crock pot I can cook just about anything in it, I love it for camping as well. I don't always want to be tied to a grill or stove so the crock pot is a great appliance for camping too.

    Oh my goodness, this was soooo good!!!! It really hit that craving we were having for Italian food without having to eat a bunch of carbs. I did sprinkle a little extra grated parm on at the end right before serving. I wonder if you could eat this like spaghetti with sauce? Thank you so much for sharing!!

    I also love my crockpots. I look for the appliances at ebay because I much prefer the older models with just the three settings of WARM, LOW and HIGH. I also think the newer models tend to heat up to a higher heat and thereby cook the food too fast or overcook during the night.

    I have a 2 QT, 3 Qt, 4.5 QT, 5 QT and a 6 QT oval.

    This recipe looks delicious. Can I freeze leftovers and reheat?

      Cooked summer squash does not freeze well. I've found that to freeze, you have to blanch being careful not to cook much.

    Crock pots -- I'm somewhat addicted to crock pots and slow cooking and don't care if the housing unit is plain or decorated. I literally have a personal crock pot for taking lunches to work and warming them, a 1 qt., 3 qt, 5 qt, and 2 oval 6-quart crock pots (yes, you could say I have a slight problem!). All of my crock pots are "old school" and have three preset temperature settings -- warm, low and high -- nothing fancy, like programming, etc. I figure the less features, the less that can possibly go wrong. One of my crock pots was my Mom's and has been in use for more than 30 years, another I have had for more than 20 years. I do like the fact that the oval crock pot can handle oblong shaped pieces of meat (ham, turkey, turkey breast, etc.) and is good for casserole-type dishes.       Wow! That sure is a lot of crocks. I guess I'll have to hold on to mine. It still works well. I may have to check out the personal crock pot. Sounds perfect as I hate warming food up in the microwave.
